Chef John on Jet

From the depths of the sea, where Chef Jon was a cook on a submarine in the navy, to Antarctica, China, Ireland, and way to many other places to mention, he has been adding to his repertoire of fine foods.  Fortunately for us, Chef Jon just can’t get enough of Alaska and spends his summers with us doing what he does best, putting a smile on your face and a few extra pounds on the rest of you.

A few words from the Chef:

Welcome to the kitchen of the Glacier Bay Country Inn that has been featured in Bon Appetite, Saveur, and Food & Wine. Glacier Bay Country Inn is a family owned lodge located in Gustavus, Alaska and whether you’re hiking, kayaking, or chasing 300lb halibut we’ll make sure you never go hungry. You’ll wake to the smells of fresh bread and pastries to find a full breakfast awaiting you in the dining room along with plenty of fresh fruit. Since most of our guests are away from the lodge for the day we pack you a homemade lunch to take with you on your adventure. We’ll set out an afternoon tea-time spread of smoked salmon dip, cookies, and other treats that you can enjoy around the fire while we put the finishing touches on our nightly three course meals. English roasted prime rib with horseradish au jus or Halibut Southwestern with a roasted red pepper sauce? Fresh Dungeness crab or Schezuan duck? The menu changes daily but you’ll always find fresh local seafood and produce on your table. We’ll do our best to accommodate any special dietary needs you may have, but please remember that we are a remote lodge so we’ll need to know in advance. I have been fortunate to have a career that has taken me around the world, but I can’t imagine spending an Alaskan summer anywhere else. We look forward to being a part of your Alaskan adventure.
